Madame Lam Restaurant has just partnered with European Pork (EU Pork) to host an exclusive launch event, unveiling an elevated menu showcasing creative dishes crafted from European pork sourced from Spain and Portugal.

This marks the second year of the collaboration, reflecting the shared commitment of both partners to celebrate the exceptional quality of European pork and contemporary Vietnamese culinary artistry at Madame Lam – the restaurant honored in the Michelin Selected list for three consecutive years.

Europe is known as the world’s second-largest pork producer and the leading exporter of pork and pork products. This success stems from the European Union’s strong foundation in sustainable pig farming that adheres to the highest standards of environmental responsibility, food safety, animal welfare, traceability, quality, and flavor to safeguard consumer health and well-being.

At Madame Lam, the special menu featuring premium European pork will be served from November 1 to 14, 2025. Crafted by talented Chef Như Cường, the four-course menu presents a refined fusion of Asian and European culinary styles, where each dish highlights the natural tenderness and sweetness of top-quality pork, delicately paired with typical Vietnamese herbs and spices.

The menu begins with a refreshing EU pork tenderloin salad, featuring European white pork tenderloin and belly complemented by carrots, snow salad, tomatoes, and passion-fruit dressing. Next will be the steamed Vietnamese dumplings with truffle fish sauce, offering silky dough filled with white pork belly and mung bean, harmoniously infused with exquisite truffle aroma. Guests will then enjoy two standout main dishes: grilled EU white pork chops marinated in kombucha with Vietnamese herbals Sauce & EU pork loin with cured ham, wrapped in crispy sticky rice. Each course will be paired with selected European wines, promising a memorable and elevated dining journey.

Honored in the Michelin Selected list for three consecutive years, Madame Lam is dedicated to contemporary Vietnamese cuisine – where traditional flavours are presented through a modern, refined, and multidimensional culinary lens in a warm and elegant Vietnamese-heritage setting.
