Tucked away in the heart of Hoi An, Hidden Thaiger isn’t just a Thai restaurant, it’s a love letter to Thailand’s rich culinary, retold through the warmth of a new home in this ancient town. It’s a place where every plate carries a story, every spice whispers of memory, and every meal feels like a reunion with old friends.

The story of Hidden Thaiger begins with Maew, a Bangkok native whose passion for food was born in the heart of her family kitchen. Growing up, her home was filled with the symphony of sizzling woks, the perfume of lemongrass and chili, and the comforting hum of family gatherings that often revolved around food. To Maew, cooking was never just about ingredients, it was an act of care, a language of connection.

Years later, after settling in Vietnam, Maew found herself missing the tastes of home; the vibrant colours, the harmony of sweet, sour, salty, and spicy that defines Thai cuisine. But more than that, she missed the feeling of belonging that a shared Thai meal evokes: friends sitting close, food placed at the center, and laughter bridging every conversation. From that longing, the idea for Hidden Thaiger was born a place where authenticity meets artistry, and Thai flavours could find a new rhythm in the heart of Hoi An.

Maew partnered with Chef Alessio Rasom, a professional chef known for his daring creativity and deep respect for traditional flavors. Together, they crafted a menu that reflects the soul of Thai cooking bold yet balanced, fiery yet comforting. Their collaboration honors the diversity of Thailand’s culinary landscape while celebrating the freshness of Vietnamese ingredients.

Every dish at Hidden Thaiger carries a story. The Crying Beef, tender grilled flank steak paired with a tangy nam jim jaew dipping sauce is one of the highlights of our Signature Set Menu. The Tom Yum Goong, Thailand’s iconic soup of shrimp, lemongrass, and lime, embodies the country’s perfect balance between intensity and grace. Even the humble papaya salad (Som Tum), with its crunch and zest, captures the joy of Thai street markets and the rhythm of life that pulses through every Thai kitchen.

Hidden Thaiger is more than an aesthetic experience. It’s a cultural bridge, one that connects Thailand and Vietnam through shared appreciation for flavour, hospitality, and community. In both countries, food is a celebration, a daily ritual, and a way of saying you belong here.

“We wanted to create a place where people can come together; families, travelers, locals and feel the warmth of Thai food made from the heart,” she shares. “It’s not just about the spice or the presentation. It’s about emotion. It’s about home.”
Hidden Thaiger isn’t hidden at all for those who seek authenticity.
It’s a secret worth sharing – one bite, one laugh, one memory at a time.
